With Christmas only a few months away it’s time to share my favourite festive recipe. Last year I made these for friends, family, and anyone who happened to come near me! I found the recipe on another blog(link at the bottom to the original post)
I tweaked it slightly to work for me, but frankly, it’s a chocolaty, minty, christmasy treat 🙂
You will need :
250g icing sugar
60g cocoa powder
3 egg whites (I bought a carton of egg whites as I had no use for the yolks and didnt want waste.)
Pinch of salt
1 tbsp vanilla extract
Large handful of chocolate chips
3-4 gluten free candy canes crushed up (poundland is good for these in packs of 12)
Preheat oven to 180° or gas mark 4 and line baking sheets with greaseproof paper.
Whisk together then sugar, cocoa and salt.
Beat in egg whites and vanilla extract. This will make a thick batter.
Fold in the chocolate chips.
Drop teaspoons of the mixture onto the prepared baking sheets at least 4cm apart. These spread like mad so you need to ensure you aren’t putting too much mixture on and not too close together. You will need to do more than one sheets worth.
Bake for 12-15 mins. When baked they will be glossy, cracked on top and still squishy.
Once out of the oven sprinkle on some crushed candy cane and leave to cool.
Once cooled they will set and be lovely chewy, gooey cookies.
